It's weird to see "open source" licenses that mandate arbitration, especially arbitration in specifically Cologne, Germany.
It would make sense if they would always be involved, but since it could be between a contributor and a third party, you can get a bizarre situation where two parties in, say, Poland, has to go to Cologne for arbitration.
I think it is because the licenses were written by a legal team in Cologne, but I'm not completely sure.
